Low-Potassium Diet: Foods to Avoid

When following a low-potassium diet, it is important to steer clear of foods that have a potassium content exceeding 200mg per serving. While many are aware of the high-potassium levels found in bananas, there are other fruits that should be avoided as well, such as prunes, papaya, honeydew, and cantaloupe. Surprisingly, even one cup of diced tomatoes contains over 400mg of potassium, while a cup of tomato juice has more than 500mg. Additionally, avocados, sweet potatoes, white potatoes, and most beans are also considered high-potassium foods to avoid.


Reducing Potassium Content: Cooking Techniques

There are cooking methods that can help minimize the potassium content of certain high-potassium foods. This is particularly useful for vegetables like potatoes, carrots, beets, and certain types of squash. Here’s how you can do it:

  1. Peel the vegetable and place it in cold water.
  2. Cut the vegetable into 1/8 inch slices and rinse it in warm water.
  3. Soak the vegetable in warm water for a minimum of two hours.
  4. Ensure you use at least ten times the amount of water compared to the vegetable.
  5. Cook the vegetable using five times the amount of water compared to the vegetable.

It’s important to note that this leaching process should only be used occasionally to limit the intake of high-potassium foods.
