Consuming excessive amounts of coumarin can have detrimental effects on the kidneys and liver, potentially leading to damage or even failure. Additionally, coumarin can interfere with the body’s natural ability to control bleeding. In some cases, it has also been associated with neurological dysfunctions in children.


Legal Restrictions

Understanding the legal restrictions surrounding coumarin consumption is important for maintaining a healthy lifestyle. The German Federal Institute for Risk Assessment advises individuals to consume less than 0.1 milligrams of coumarin per kilogram of body weight, as higher intake over a short period may not be safe. European health agencies have implemented regulations that limit the amount of coumarin from cinnamon allowed in baked goods and desserts. In the United States, the Food and Drug Administration classifies coumarin as one of the “Substances Generally Prohibited From Direct Addition or Use as Human Food.”
