Delicious Avocado Toast Triangles

Avocado toast is not only a popular brunch classic, but it can also serve as a nutritious appetizer before dinner. Avocados are packed with antioxidants and contain nearly 20 essential vitamins and minerals. They are rich in magnesium, which promotes healthy bones, and vitamin E, which supports cell function.

To make avocado toast triangles, start by slicing whole grain toast into small, bite-sized triangles. Next, spread ripe avocado that has been mashed with a fork onto the toast. Drizzle a bit of olive oil over the avocado and sprinkle a touch of sea salt on top. For an extra kick, add a scattering of chili flakes before serving.


Baked Vegetable Fritters

Try this nutritious twist on traditional fried potato pancakes by combining a variety of vegetables. Start by using your food processor to blend together a mixture of broccoli, cauliflower, zucchini, squash, carrots, spinach, bell peppers, or any other vegetables you prefer. Once blended, make sure to remove any excess liquid from the mixture. Next, add in eggs, flour, garlic powder, and other seasonings to enhance the flavor. Shape the batter into balls and flatten them on a cookie sheet lined with parchment paper. Instead of baking, you can also choose to air fry the fritters if desired. If there are any leftovers, simply reheat the fritters and enjoy them the next day in a wrap with your favorite dipping sauce.
