Interestingly, even traditionally cured bacon that is treated with nitrites may offer health benefits. This is because smaller bacon manufacturers often supplement their products with vitamins C and E. Research indicates that these additional nutrients can help prevent the formation of nitrosamines, while also promoting the production of beneficial nitric oxide in the body.
