Research Finds Schmaltz is Just as Healthy as Butter
A recent study conducted by Doctor Rajiv Chowdbury and published in the Annals of Internal Medicine has debunked the myth that schmaltz, along with other high-fat foods like cream, egg yolks, fatty meats, full-fat cheese, and butter, are detrimental to cardiovascular health. Surprisingly, the study found that these foods are no worse for your heart than healthier alternatives like olive and canola oil.
Supporting these findings, the American Journal of Clinical Nutrition at Penn University discovered that a diet rich in monounsaturated fats, which are found in both schmaltz and olive oil, does not increase triacylglycerol levels or reduce the levels of HDL cholesterol (often referred to as “good” cholesterol). In fact, monounsaturated fats have been shown to help lower levels of LDL cholesterol, which is considered harmful to heart health.
