Sulfites, which are commonly used as preservatives in various wines and prepared foods such as salads, dried fruits, and delicatessen products, can have negative effects on certain individuals. However, there is a natural solution for detoxifying sulfites and acetaldehyde, a potential carcinogen. Lima beans, known for their nutritional value, are an excellent source of molybdenum, a trace mineral that plays a crucial role in the functioning of enzymes responsible for detoxifying sulfites and acetaldehyde.


Cancer Treatment

A study published in Applied Microbiology and Biotechnology highlighted the potential of a peptide found in large lima beans to induce cell death in human nerve cancer and liver cancer cells. Additionally, research published in the International Journal of Biological Macromolecules suggested that lectin, a protein present in lima beans, may have inhibitory effects on angiogenesis, which is the formation of blood vessels that supply nutrients to tumors. However, it should be noted that some medical professionals express concerns about the role of copper in lima beans, as it may promote angiogenesis in certain types of cancer.
