Protects Against AGEs
One of the many benefits of consuming Italian sour cherries is their ability to protect against advanced glycation end products (AGEs). When sugars combine with lipids, they create AGEs, which can trap LDL particles and contribute to the oxidation process. This oxidation can lead to atherosclerosis and other degenerative diseases, as well as accelerate the aging process both internally and externally. However, research has shown that both dried and fresh Italian sour cherries, particularly when fully ripened, contain higher levels of phytochemicals. These phytochemicals have been found to exhibit antioxidant properties and can also counteract the glycation process, thereby reducing the formation of AGEs.

In a study conducted on diabetic mice, researchers examined the effects of a unique red sour cherry extract that included both pulp and seeds. The results revealed that regardless of the concentration, P. cerasus not only reduced blood sugar levels but also aided in the regeneration of pancreatic cells and alleviated oxidative stress.
